Wheel rim size question

This has probably been asked to death, I did search, but didn't find what I needed. I have a 2005 GTO. I am interested in new, larger rims. I know there isn't much room in the wheel well, but I can go larger than my stock 17's. What has worked for you without rolling the fender. The suspension is stock, but the original tires are just too small, leaving a huge gap between the tire and fender.

I can figure out the tire size to get close to the correct mph, but rim size and offset are what I am interested in.
