There really should be plenty of cooling there. Are you taking an actual temp of the motor? Or are you just looking at the stock gauges?? Removing the T_stat can actually cause more problems. The coolant will flow through the block too fast and not remove heat properly. That`s why racers use a restrictor, like a big washer were the stat goes to help slow the water down.
If the suggestions 05GTO doesn`t help, maybe check the water pump to be sure it`s the right unit for the car and that the impeller blade is still attached to the center shaft, I`ve seen them come loose. I`ve also seen wrong impeller blades installed from the reman place so the blades are backwards, which are meant for serp belts that cause the pump to run in the other direction. If the impeller is of the wrong design that will cause overheating problems that will be worse the faster the car goes.
Also if the block is full of crud, that will cause this condition too.
I also could not get my car to stop pinging when I first got it, they had the wrong distributor installed that was swinging the timing in the wrong direction under acceleration, I couldn`t get it to run right to save my *** until I swapped it out with the original one.
