First, the stroke is the distance the piston will travel from the top of the cylinder to the bottom of the cylinder. A "stroker" is when that distance has been modified with a pushrod of a different length and/or a different size crank shaft.

The bore is the size of the cylinder opening, by increasing the bore will allow more volume.

When you bore and stroke an engine you increase the engines cubic inch displacement. In order to see the best results a larger cam is needed to allow for a better flow of the intake and exhaust.
